Each week I write a shopping list of all the food we need for the week. I’ve been doing this ever since I left home. I blame my dad for this, I still use the same headings he used for shopping lists years ago!
Writing a shopping list is definitely one of my top tips to stop creating food waste, you will only buy the food you need for the week and not have extra vegetables rotting at the bottom of your fridge.
If anything might go out of date within the week, check if you can pop them in the freezer, we often do this with meat. However, before you place food in the freezer make sure you split them into meal sized portions, so you don’t have to take too much food out the freezer at once.
We often have little portions of fruit in the fridge that is about to go out of date, so I also pop them in a bag in the freezer. Then you can use them for puddings or with ice cream and yoghurt.
Currently we have a lot of rhubarb taking up room in our freezer, so I created this recipe to use them.
Rhubarb and Strawberry Oaty Bites
Ingredients: Several stems of Rhubarb (approx. 150g);
Large handful of Strawberries (approx. 150g);
120g Plain flour;
200g Oats;
100 g Brown Sugar;
25g Sugar;
Juice of 1 Lemon;
2.5 tsp Cornflour;
50 g Butter;
1 Tbsp Honey;
2 tsp Baking Powder.
1. First you need to add the rhubarb, juice from the lemon, white sugar and cornflour to a large pan and cook on low heat for 10 minutes until the mixture thickens into a compote.
2. Preheat the oven to 180 degrees Celsius and prepare a large tin or two smaller tins with greaseproof paper.
3. In a mixing bowl mix together the oats, flour, brown sugar, baking powder.
4. Melt the butter and honey and mix into the dry ingredients until well combined.
5. Stir in half the rhubarb and strawberry mixture, swirling it through the oats.
6. Pack the mixture into a large (or 2 smaller) grease proofed tin and place in the oven for 30 minutes, or until golden brown on top.
7. Let it cool down in the pan before cutting into bite size pieces.
