I love growing vegetables in the garden and beetroot are particularly easy to grow and the slugs don’t seem to eat them. I never pick them early enough to pickle and so inevitably I have large tennis ball sized beetroot, which must be made into something delicious like cake.
I’ve had this recipe for years, previously written down from a friend’s cookbook (unfortunately I have no idea which one) and tweaked over time.
Chocolate Beetroot Cake
Ingredients:
175g butter
175g caster sugar
3 medium eggs
50g cocoa powder
100g self- raising flour
1/2 tsp baking powder
75g melted chocolate
1 tennis ball sized beetroot (grated)
1. Cream together the butter and sugar.
2. Beat in the eggs one at a time.
3. Sift in the cocoa, flour and baking powder (I admit I’m lazy and rarely sift, just dump it all in the bowl!)
4. Fold in the melted chocolate and grated beetroot.
5. Transfer to a loaf tin and bake at 160 degrees Celsius for approximately 1 hour and 10 minutes.
Of course, when I’m baking this little one has to help and his favourite part is to lick the bowl! Got to love messy chocolate covered kids!

Oh I love cakes with veggies in, some people think they’re weird and refuse to eat them, but I always think it makes them extra moist (especially good for choccy cake which, in my opinion, seems to dry up pretty quickly!) I’ve never grown beetroot before but I think maybe I will give it a go next year.

have been using beetroot in cakes for years, and like carrot it makes for a sweet and delicious result, though a lot of people will say yuck if you tell them but enjoy it if you dont.

Beetroot are so easy to grow and slugs (at least the ones here) don’t seem to eat them once they are out of seedling size (unlike the rest of our veg which was decimated!). The definitely make for delicious moist cakes! 🙂 x

Oh this sounds lovely and moist. Thanks for the tip that beetroot are easy to grow. We grow a reasonable amount of our fruit but hardly any veg. I must give beetroot a go, especially since they can be used in cake. I love them with goats cheese too.
